About this Text

This text was a labor of love, written by two overworked community college professors during the Covid-19 pandemic. It was created to provide a free resource for students, one that provides information on all of the topics covered in an introduction to nutrition course. It was just the two of us – we had no help with editing, formatting, or publishing. Therefore any and all mistakes are ours alone – sorry! Depending on your browser, some of the pictures and diagrams may be a little grainy, but we hope you find the content easy to understand and useful for your course. As this is an OER text, feel free to download, edit, and improve any part of the text for your own purposes.

Text Description

Consumer Nutrition is an OER textbook developed as an introductory nutrition resource appropriate for non-nutrition majors enrolled in science and health courses. It includes content from several OER nutrition texts previously published. We are incredibly grateful for the content and organization of these texts, and used them extensively throughout our book.
